Ingredients

For the cookie…

  • ½ butter, room temperature
  • 1 cup granulated sugar
  • 1 egg, room temperature
  • 1½ teaspoons vanilla extract
  • ¼ teaspoon almond extract
  • 1 tablespoon milk
  • ½ teaspoon salt
  • 1 ⅔ cups all purpose flour

For the cream cheese frosting…

  • 4 ounces cream cheese, room temperature
  • ½ cup butter, room temperature
  • 2 teaspoon vanilla extract
  • ½ teaspoon salt
  • 1½ cups powdered sugar

For the fruit garnish…

  • 32 ounces of strawberries
  • 18 ounces of blueberries
  • Fruit of your choice

Directions

  1. Preheat your oven to 350°F.
  2. Line a 9 x 9 baking pan with parchment paper and set it aside.
  3. In a stand mixer with the paddle attachment, mix the butter and sugar until just combined.
  4. Add the egg, milk, vanilla, and almond extract, and mix well.
  5. Scrape down the sides of the bowl, then add the salt and flour, and mix for about 1 minute.
  6. Transfer the cookie dough to the prepared pan, spreading it evenly to the edges and smoothing out the top.
  7. Bake the bars for 20 minutes, or until the edges are golden brown but the center is still gooey.
  8. While the cookie layer cools, make your frosting. In a mixing bowl, combine 4 ounces of room temperature cream cheese and ½ cup of room temperature butter. Mix until smooth.
  9. Add 2 teaspoons of vanilla extract and ½ teaspoon of salt, mix until combined. 
  10. Gradually add 1 ½ cups of powdered sugar to the mixture, mixing on low speed until incorporated.
  11. Once all the powdered sugar is added, increase the speed to medium-high and beat until the frosting is smooth and creamy.
  12. Spread the prepared frosting evenly over the cooled cookie sheet.
  13. Wash and dry strawberries, blueberries, and your choice of fruit. Slice the fruit or leave them whole for garnishing.
  14. Arrange the fruit on top of the frosting in your preferred design.
  15. Once decorated, slice the cookie into squares and serve. Enjoy!
