  • ¾ cup dark brown sugar, packed
  • ½ cup granulated sugar
  • 1 tablespoon honey
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1½ cups all purpose flour
  • 1¾ cups old fashioned rolled oats (not quick oats)
  • 2 teaspoons cornstarch
  • 1 teaspoon kosher salt
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon cinnamon
  • 1½ cups semisweet chocolate chips, plus more for topping
  • Vanilla ice cream

Directions

  1. Brown the butter in a small pan over medium heat, stirring occasionally until it turns golden brown and emits a nutty aroma. Transfer to a bowl and let it cool to room temperature.
  2. In a medium bowl, whisk together the flour, oats, cornstarch, salt, baking soda, baking powder, and cinnamon.
  3. In a large mixing bowl, combine the dark brown sugar, sugar, and honey.
  4. Once the butter is at room temperature, pour it into the bowl of sugar and whisk to combine.
  5. Add the eggs and vanilla to the sugar mixture, whisking thoroughly until the mixture turns into a pale and smooth consistency.
  6. Gradually add the flour mixture to the wet ingredients, mixing until no flour streaks remain.
  7. Fold in the chocolate chips until evenly distributed throughout the dough.
  8. Let the dough chill in the refrigerator for 25 minutes.
  9. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  10. Using a cookie scoop, place 6 dough balls on the prepared baking sheet. Add a few chocolate chips on top of each dough ball.
