Pumpkin Cream Cheese Muffins

Ingredients

For the muffins:

  • 1 ¾ cup all purpose flour
  • ¾ cup sugar
  • ¾ cup brown sugar
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • 2 ½ tsp pumpkin spice
  • 15 ounce pumpkin puree
  • ½ cup melted butter
  • 2 eggs
  • 1 tsp vanilla extract

For the cream cheese filling:

  • 8 oz cream cheese, room temperature
  • 4 tbsp sugar
  • 2 tbsp all purpose flour
  • 2 tsp milk
  • 2 tsp vanilla extract

Directions

  1. Preheat the oven to 350° and line your muffin tin with paper liners. 
  2. Combine the flour, granulated sugar, brown sugar, baking soda, salt, cinnamon, and pumpkin pie spice and set aside.  
  3. In a large bowl, mix by hand the pumpkin puree, melted butter, eggs, and vanilla extract.
  4. Gently fold in the dry ingredients into the pumpkin mixture. Be careful not to overmix. Using a cookie dough scoop, portion the batter into the muffin liners, filling them approximately ⅔ of the way full.
  5. In a small bowl, combine the room temperature cream cheese, sugar, flour, milk, and vanilla extract. Mix until smooth. Transfer the mixture into a piping bag and, measuring with your heart, pipe it into the center of each muffin.
  6. Bake at 350°F for 20-25 minutes, or until a toothpick inserted into the center comes out clean. As these muffins bake in your kitchen, take in the comforting scents of fall.
