Pumpkin Cream Cheese Muffins

Ingredients
For the muffins:
- 1 ¾ cup all purpose flour
- ¾ cup sugar
- ¾ cup brown sugar
- 1 tsp baking soda
- ½ tsp salt
- 1 tsp cinnamon
- 2 ½ tsp pumpkin spice
- 15 ounce pumpkin puree
- ½ cup melted butter
- 2 eggs
- 1 tsp vanilla extract
For the cream cheese filling:
- 8 oz cream cheese, room temperature
- 4 tbsp sugar
- 2 tbsp all purpose flour
- 2 tsp milk
- 2 tsp vanilla extract
Directions
- Preheat the oven to 350° and line your muffin tin with paper liners.
- Combine the flour, granulated sugar, brown sugar, baking soda, salt, cinnamon, and pumpkin pie spice and set aside.
- In a large bowl, mix by hand the pumpkin puree, melted butter, eggs, and vanilla extract.
- Gently fold in the dry ingredients into the pumpkin mixture. Be careful not to overmix. Using a cookie dough scoop, portion the batter into the muffin liners, filling them approximately ⅔ of the way full.
- In a small bowl, combine the room temperature cream cheese, sugar, flour, milk, and vanilla extract. Mix until smooth. Transfer the mixture into a piping bag and, measuring with your heart, pipe it into the center of each muffin.
- Bake at 350°F for 20-25 minutes, or until a toothpick inserted into the center comes out clean. As these muffins bake in your kitchen, take in the comforting scents of fall.
