- ¾ cup dark brown sugar, packed
- ½ cup granulated sugar
- 1 tablespoon honey
- 2 eggs
- 1 teaspoon vanilla extract
- 1½ cups all purpose flour
- 1¾ cups old fashioned rolled oats (not quick oats)
- 2 teaspoons cornstarch
- 1 teaspoon kosher salt
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon cinnamon
- 1½ cups semisweet chocolate chips, plus more for topping
- Vanilla ice cream
Directions
- Brown the butter in a small pan over medium heat, stirring occasionally until it turns golden brown and emits a nutty aroma. Transfer to a bowl and let it cool to room temperature.
- In a medium bowl, whisk together the flour, oats, cornstarch, salt, baking soda, baking powder, and cinnamon.
- In a large mixing bowl, combine the dark brown sugar, sugar, and honey.
- Once the butter is at room temperature, pour it into the bowl of sugar and whisk to combine.
- Add the eggs and vanilla to the sugar mixture, whisking thoroughly until the mixture turns into a pale and smooth consistency.
- Gradually add the flour mixture to the wet ingredients, mixing until no flour streaks remain.
- Fold in the chocolate chips until evenly distributed throughout the dough.
- Let the dough chill in the refrigerator for 25 minutes.
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
